On our trip to Philly on Saturday, we found – just by chance while walking from Independence Hall to Rittenhouse Square – this great little espresso bar on Spruce Street; Spruce Street Espresso.

They had on their shelves coffee cups from several Seattle coffee houses, so we knew we could trust the barista.

Have you ever thought about that? Trusting the barista, or any other culinary type? Great, artisanal food preparation is an art. It takes skill and talent. As a matter of fact, I'll bet making good espresso is a lot like using a grid and setting beautiful type. 

In exactly what ways, I'm not sure. I'll think on it and get back to you. You shouldn't trust just anyone to pull your shots in the same way you shouldn't trust just anyone to set type.
